What can I do with a mountain of sliced roast beef?

Cooked a fantastic rib of beef on sunday, had quite a bit left over. We had bubble & Squeak last night, with cold beef, which was lovely. I still have loads of sliced beef left. Could I put them in my slow cooker with some stock and veg and make a beef casserole?? Or would they stay sliced and end up being gross??
Any ideas?

You could curry it, casserole it, make a stew.

yeah but it is sliced up, shall I just chop it into 1 inch slices and then curry/casserole it?

I was going to say - bung it in a stew. I'd chop it up into 1 inch squares and make the stew as normal not forgetting the dumplings!

After xmas lunch I had loads of sliced turkey left. I froze it and when I wanted to use it defrosted it then put it in a dish with some sliced onions and gravy. Cooked it for about an hour and it was yummy. Suppose you could do the same thing with the beef.

freeze it in freezer tubs or bags for next time.

Just to let you know, I turned the beef into a casserole.
I chopped it into 1 inch slices, put it in a slow cooker with diced onions, carrots cut into batons, stock (bit of bisto, glass of red wine, water), tin of chopped tomatos, bit of mustard and thyme. I also put in some par boiled potatoes 10 mins b4 eating.
It was delicious.
Our chunk of beef fed 3 adults & 2 under 5s as a roast on sunday, 2 adults and 2 under 5s as bubble and squeak on monday and 2 adults and 2 under 5s as a casserole on tuesday. How chuffed am I!!

Cut into strips and freeze it to make fajitas.
