Potato salad without mayo

I am interested in doing a healthier version of potato salad. Does anyone have any tried and tested recipes?

I use Mary Berry low fat salad dressing and spring onions in mine.

DS can't have eggs so we don't put mayonnaise in potato salad. A mix of potatoes, green beans, tuna and capers with olive oil and your choice of herbs is nice.

Agree about the spring onions, or clives. Bliss.

Anyway, baby potatoes, french dressing with garlic and then chives if you have them. really yummy.

There is a recipe in A Modern Way To Eat, which has boiled new potatoes, caramelised leeks, sliced radish, dill, and chopped celery. The dressing has olive oil, lemon juice, honey, and Dijon and whole grain mustard. It's really yummy.

I like it made with steamed baby new potatoes (skin on) and either a mustardy or herby vinegrette stirred in when the potatoes are still warm.

Much prefer this to the more traditional version

Thinly sliced red onion, olive oil, white wine vinegar, lemon juice, salt and pepper - preferably poured over sliced salad potatoes when they are still warm so they absorb the flavours.

what's also nice is making a sauce by boiling a fineky diced onion/shallot in gherkin liquer.

I've always made it with olive oil, white wine vinegar, sea salt (pref the flaky sort), black pepper and spring onions. Mum always made a classic french dressing proportion, but I use less oil like the austrian recipes.

There are some great ideas here, thank you. I think I will make a few different versions and see which ones I like. I love the idea of using different types of mustard.

A herby vinaigrette is delicious on potato salad. A little oil, vinegar/lemon, salt and pepper and massive piles of whatever herbs you like (I like chives, basil, parsley and mint). Dress the potatoes when they are still hot so it kind of soaks in a bit Grin
