And thought I would share, as it is so yummy! (I've sneaked a bit before the bed and bath dc debacle Grin)

Basically it was an oven tray with some sad looking mushrooms, peppers, onion and garlic, and a punnet if baby pl tomatoes, roasted in the oven with balsamic, olive oil etc. then when nearly cooked I drained and rinsed a couple of cans of butter beans, and mixed them in, and put back in the oven for about 5 mins. I also popped some streaky bacon in the oven too. I then just emalgamated everything into a big salad bowl, along with tons of basil. And I have to say Blush it's blooming lovely!!

A few days ago mushroom risotto with
dried mushrooms
risotto rice
oil or butter
stock cube stock
any hard ends of cheese you have
optional: onion, non-dried mushroom

Yum!! I do like a risotto, comfort food at its best!! And I definitely always have cheese! Grin

That looks good. Love a cupboard bung it in the oven dinner!

Trills that used to be DH's trick. Until he used off mushrooms and very smelly cheese in a end-of-fridge-raid. Probably the worst risotto either of us have ever had.
