beetroot - what to do with them?

found a bundle of beetroot (fresh) in the fridge. DH must have bought it last week. no idea what he was thinking. we never buy beetroot. anyhow, what can I I do with them? quick and easy please.

Roast them in the oven with some olive oil. Then have them in a salad with some feta cheese and maybe some lentily lentils. Yum.

Pickle them and serve as a side dish.

Definitely roast them. Enhances the flavour by a million percent.

Amazing with goats cheese, toasted walnuts and rocket salad.

Feta, pine nut amd roasted sweet potato or squash salad.

I roast mine together with whole garlic cloves and wedges of red onion and serve as a side with a Sunday roast, particularly beef.

Chop into match sticks and add to a stir fry, season with oyster sauce. If you use red onions, mushrooms and black beans the colour run won't seem so bad.
Scrub hands straight after handling.

Any left over can be made into a soup, serve chilled with yogurt and herbs.

chop them up and make a nice barszcz, with some carrots and onions, meat or veg stock, boil them until most of the colour is in the soup, and the veg are soft. Discard veg and serve this lovely healthy soup with yogourt.

I think I am going for the roast with some garlic.

Do I peel them (can you tell I never cooked them before Blush)?

Wash them, wrap in foil & bake in the oven til soft, then peel & slice and add to onions, garlic, olive oil, chilli & thyme and stick it all back in the oven for 10 minutes. Crumble a block of feta over the top & bake again til feta is slightly melty. Serve with rice.

I put half a raw beetroot into my smoothie every morning. Also second roasting them - you can add balsamic vinegar at the end for another option. Amazing with goats cheese or feta cheese in a salad.

No, I don't peel. Just chop into wedges and mix with the garlic and onion and some olive oil and fresh thyme, put in a dish and roast for about twenty minutes (I put them in at the same time as the Yorkshire puddings).
