I'm wondering if there is a misprint as the pastry recipe seems to have not nearly enough flour or too much butter....have scoured the web but cant find anyone else having a problem. It calls for 400g flour, and 400g butter, 2 large eggs plus 2 egg yolks, some icing sugar lemonn zest and vanilla seeds but the mix is a soggy mess not pastry like at all!!! help!!!

i think that with icing sugar, pastry goes very very soft and you have to squidge it into the case rather than attempt to roll it ... have only ever made regular treacle tart - too intimidated to try Heston's recipes

Well I could not join in this thread could I?! I make a very soft pastry for my lemon tart (my quantities are 125g melted butter, 40g icing sugar, 1 tablespoon cold water) You just mix them all together and and yes you just squadge it up the sides of the tin. but I'm guessing my quantities would still make a much drier pastry than the quantities you mention. Are you sure you've got them right? I've googled the recipe and came up with this the quantities in the link seem more usual I think.

Recipe book deffo says 400g flour, 400g butter. I found that link too - which is what made me think the cookbook must be wrong - as the recipe is more or less the same apart from the ratio of flour to butter.

So we added another 200g flour to make the flour to butter ratio the same as in that link at looks better - but was too late to bake by then as it has to rest for 3 hours (doing it with my 12 year old as book was one of his christmas pressies).

So wll see what happens when we bake it tomorrow!
