Fennel - what to do with it?

Never used this before. Any simple ideas please.

slice finely, sprinkle with rock salt, drizzle on honey and olive oil and roast !

chop into 1/8ths or so, olive oil, and roast in oven good for salads, panini sarnies, eating w/ fish other dishes

grater up in soup

one of my favourite veg atm..beautiful

apparently it is a natural breath freshner? you can chew it instead of gum.
never tried it meself as can't stand the taste
