RED WINE sauce/gravy? any suggestions.....

Hi, just a quickie? had friends round for dinner last night and I?m now left with ? a bottle of red wine. (Which me and dh don?t drink!)
Does anyone know a quick and easy recipe for a red wine sauce/gravy that I can serve with sausages and mash (or similar) tonight?? perhaps an onion style gravy??

Seems a shame to waste it!

really easy one that I do is:
Sweat off some onions and garlic in a pan.
Add some fresh herbs (I usually use rosemary or thyme)
Add stock (whichever one you use to go with the meat you're doing).
Add red wine (usually about a glass full per 2 people I use)
Bring to boil and keep on a rolling boil to reduce a bit.

same as armadillo really but add some flour before stock.

season well at end.

maybe add something for sweetness - jelly type jam, or soy sauce.

Sounds perfect thearmadillo, will it reduce and thicken? without butter/flour to start?

It will reduce and thicken if you put a lid on it and leave it to boil for quite a while. You have to watch it though as you need to be careful it doesn't boil over.

This I think usually makes sure most hte alcohol is boiled off as well.

you can freeze it in glass amounts in plastic bags then add to any gravy or casserole. Means you can use it over a long period rather than serving up a week or wine flavoured sauces!

Thanks guys, just had a lovely dinner! with a really yummy red wine sauce!

Tasted a bit to red winey for our liking at first, but added a bit of jam and it was scrummy in my tummy!!!
