best use of leftover roast chicken?

As the title says really...
I have loads to use up. I normally just chuck it all in a curry, but fancy something different this time?

What is your favourite recipe for leftover chicken?

Shredded in a risotto with some peas/asparagus/broad beans. Yum

Second risotto, make sure you tip some white wine and butter in!

I never have a lot of roast chicken left over, even if I buy an extra large one there is never enough left over for more than a sandwich!!

But this recipe is so nice, I roast a chicken the night before just to make it! (I use a large onion instead of the shallots, haven't ever got the patience for shallots!)

I have some kind of block when it comes to making risotto! I've only really attempted it once...Would that just be a basic risotto recipe (stock, wine, onion, rice) and stirring the chicken in while it's still pretty wet?

I make a chicken pie of sorts with creamy white sauce, lightly fried veg topped with pastry.

If in risotto, don't put chicken until the end to just warm through or it will completely fall to pieces.

Other yummy ideas:
Chinese chicken and corn soup
Chicken pie (mmmm!)
Chicken Caesar or Waldorf salad
Chicken mayo sandwiches. Especially delicious if you chop up some cashews and add to the mix.

Thai chicken curry (paste, coconut milk and beg like red pepper : green beans), or risotto (add bacon or mushrooms) or pie with leeks and a creamy sauce.

I quite like to boil the carcass for hours, then chuck in chilli, garlic, ginger, leftover chicken and some noodles. and a dash of soy sauce / any veg lying about.
