My usual Friday thread! Vegan all June so:
Tonight: peppers stuffed with spicy cous cous
Tomorrow: out at a srilankan restaurant
Sunday: Tuscan bean stew and ciabatta
Monday: lentil and mushroom ragu with pasta
Tuesday: falafel, pitta, hummus, olives.
Wednesday: Jamaican red beans and rice
Thursday: chana dal
Friday: schzuan potato stirfry

Not done mine yet - it's one of my jobs for later.

Thinking:
something with rice and peas, now I've seen yours!

haloumi and vege kebabs, because dd2 is having a haloumi craze

veggie chilli with guacamole, because dp has been mithering for it

quiche and salad - I might make two quiches as I fancy trying something new but dd2 only ever wants cheese and onion

some sort of curry, because it's obligatory!

something with chips, for a lazy meal

Thursday : swimming lessons night so bird's-eye freezer night

Today: chickpea curry, chappatis, and salad. Maybe a pickle if I can muster the energy

Tomorrow: gammon and parsley sauce with new potions and tenderstem broccoli

Monday: ham and potato cakes made from leftovers with ketchup

Tuesday: ribollata

Wednesday: squash and cannelini bean bake ( Anna Jones)

Thursday: linguine with raw tomatoes and basil.

Friday: moussaka

Tonight: venison meatballs with cheesey colcannon and veg and a redcurrant sauce

Tomorrow: slow cooker roast pork and trimmings

Monday: prawn, roast chicken and chorizo risotto w/ freshly baked bread

Tuesday: pimped out roast chicken salad with millions of different veg - raw and roasted, honey roasted cashews, a pesto dressing, maybe some bacon, hummus and pitta etc.

Wednesday: steak, fried potatoes, asparagus and tenderstem brocolli with a red wine sauce - maybe cauliflower cheese

Thursday: something with pasta - maybe carbonara?

Lentil & mushroom ragu sounds immense, can you share the recipe pretty please? I have loads of lentils I want to use up - I know they won't go off but I don't want them to languish too long. Plus I love a lentil, but don't really ever know what to do with them.

Done:

Monday - veggie chilli with rice and guacamole
Tuesday - haloumi kebabs with salad
Wednesday - quiche, new potatoes and salad
Thursday - channa dahl with chapatis and salad
Friday - freezer crap (Quorn whatever) with chips and homemade mushy peas
Some point over the weekend possibly - tacos with sweetcorn and courgette (Thomasina Miers) and also a mixed beany thing (recipe by Remus)

Lazy week planned for us as we've all had colds and not much enthusiasm for cooking.

Pumpkin cappelletti & sauce
(bought, cooked, super easy)
Baked sweet potatoes, baked beans & boursin
Veggie shepherds pie
Spicy black bean and feta burgers
Veggie spinach & mushroom carbonara
Frittata & baked beans
Mushroom & leek baked risotto... possibly with garlic bread

This week I've got as far as mini-beef Wellington and asparagus, parma ham and pesto pasta.

And now I'm on mumsnet instead of looking at recipes!

All done.
Sun: Code baked with spinach and cheese sauce with croquet potatoes and peas
Mon: Little burgers, garlic chicken fillets, parmentier potatoes, salad.
Tues: Spinach and ricotta pasta with tub of cheese sauce, garlic bread and salad.
Weds: Chilli con carne, rice and salad.
Thurs: Lemony, curried chicken thighs, rice and green beans
Fri: Salmon steaks, pasta with pesto, asparagus and some leaves.

DS is home from uni and dh home all next week hence so much meat.

Hello Meal Planners, fast becoming my fav MN group

Sunday: BBQ at ours (veggie burger for me, steak and prawns for everyone else, grilled courgettes and onions, corn on the cobb, sweet potatoes baked in the embers, cauliflower-rice tabbouleh, cucumber mint salad - a friend brought a vegan chocolate desert which was yum)
Monday: spaghetti squash lasagne
Tuesday: I'm out for dinner so pasta pesto for DC
Wednesday: Bean chilli and rice
Thursday: Mushroom risotto
Friday: using up whatever's odds and sods as we're off camping on Saturday YAY!

Right. I'm giving this another go:

Today: roast chicken with veggies and boiled potatoes (5:2)
Tomorrow: chicken risotto
Wednesday: roasted mediterranean veg with halloumi and a bit of chicken for DS (5:2)
Thursday: final dregs of chicken with chickpea curry and rice
Friday: out
Saturday: out at a Basque pintxo bar
Sunday: possibly hungover so chippy.

How's your vegan month going lastqueen? I know lots of your food tends toward vegan anyway, are you missing cheese? Thread derailment but wondered what the shift was for and if it's a permanent change?

We're off camping tomorrow so I've made a ton of vegan burgers and will mainly subsist on them and snacks all week until we reward ourselves with a luxury hotel at the end of the trip!

I miss chocolate more than anything! I will definitely eat much much much more vegan food, maybe do 3/4 days vegan a week after this? But I wouldn't stick to it forever. I have been dreaming about malteasers haha

Yeah fair play - my move towards veganism has been happening since moving to the states where chocolate and cheese is rubbish!
