What can I do with lemon balm?

Ive had to pull all my lemon balm out of my herb planters because it's taking over. Teach me to buy a herb because it smells nice.

Anyway I have an absolute ton of it and no idea what to use it for.... any ideas on what it goes with?

Cake. Blitz up a load of leaves with sugar in the food processor, and use it to make a cake. No vanilla.
Then you can do the sugar thing again for a drizzle.

Or just put bits in salads, cous cous, on pasta..
