Struggling to balance meals??

I'm doing a 2 week rota for childminding the format is Snack:Lunch:Pudding:Tea

I have a problem with a day

2fruit:Tomato Soup:Rice Pudding & Peaches:Sausage, Chips & beans

I would like to balance it so that it is 1 fruit for snack & still have 5 a day

How can I tweek it a bit...any suggestions?

I have given up on Veggie soup - too much waste (& I hate waste)

Carrot sticks are OK - I do use them a lot tho'

Also I do Rice with veggies (peas sweetcorn & raisins) and Rice with Fish

Can you think of a nice (easy) rice dish that I could try?

Is it safe to serve uncooked eggs if the are stamped? (eg in a mousse??)

Beans on Toast
Rice & Vegetables(sweet corn/peas/raisins)
Pizza Bread(tomato)
Chicken Nuggets with 3 veg (tomatoes/cucumber/carrots)
Pasta with Tuna(sweet corn)
Scrambled Eggs & Toast
Cheese & Potato Pie(onion & beans)
Couscous with Vegetables (courgette/onion/tomato)
Baked Potato with Cheese
Macaroni Cheese
Tomato Soup
Rice & fried veggies
(Mushrooms, onion & peppers)

Any ideas??

I wondered about cauli/broccoli florets with cheese on top lightly toasted? Or mix the cheese with breadcrumbs and the sprinkle on tp & toast?

How about pate on toast?
