First time making meringue today and this happened. What did I do wrong? I added cornflour and white wine vinegar and wonder if I overbeat it?

Thanks

They look ok- is the inside soft? Did they break when you tried to take them off the tray? They hate fat so I've had quite a few stickers and now use a Teflon tray or baking paper. Use a v low oven and then leave door very slightly ajar.
TBH I'm not a very good meringue cook and only make them to use up whites; they're very cheap to buy and I tend to crumble them up with cream and fruit so it doesn't matter. I'm sure they taste delicious.

Thanks Apocalypse. I put them on a silicon mat so maybe that was greasy? They were soft inside (but very chewy!) but otherwise tasted OK. I usually buy them and crumble them too but thought this year I should try and make my own. My MIL (sadly who lives a long way away) is great at them. Perhaps I just need to practice?

I was told if you don't want them chewy then don't add the cornflour and vinegar. Did you leave them in the oven after you had switched it off to dry out for a while? That helps mine.

It looks as if they haven't been cooked long enough, but been on too high a temperature.

110dec C for at least an hour if you want a chewy centre or over 2 hours with the a spoon handle proping the door open for crisp all the way through.

Tractor. - I wanted them chewy (but not as chewy as they were, they were like toffee Grin)

Unescorted - I followed the Tesco recipe m.tesco.com/mt/legacy.realfood.tesco.com/videos-and-tips/how-to-make-meringues.html?un_jtt_redirect=sc
