Leeks from the garden

So many wonderful cooking suggestions for the king of the alliums. Didn't read them all, but did someone mention using shredded leeks as a garnish?
Well, their growing season is going to end in the UK in a week or so after the weather finally warms up. Don't pull your garden leeks out of the ground unless you're desperate for the space. Cut them like asparagus, i.e. below ground level just above the roots. Can do this with a trowel (stick?!) to expose one side of the shaft and sever with a sharp knife just above the bulb of the root. If you'd've done this six weeks ago, you'd already be able to cut a new one. Once the remainder go to seed towards mid-Summer, cut them off at ground level. In the autumn, new leeks will delight you for another cooking fiesta.
