What can I do with half a can of coconut milk?

I will have half a can left after I have made the curry tonight. Usually I put it in the fridge for a couple of weeks and then throw it out

I would put the whole can in

or cook the rice in it

Can't make double the curry as only defrosted enough chicken for 2 people and the purpose of the meal is to use up the last of the curry paste.

So do I just boil rice in the milk? or do I need to add onion and other seasonings?
