I need a recipe for vegetarian stuffed peppers

as am trying to increase my vegetarian repetoire, any ideas welcome.

we usually have them the day after we have made (veggie) risotto or pilaf.

Slice peppers in half lengthway - ideally leaving on the stalk (just looks nicer). Scoop out seeds. Rub with olive oil, and some sliced garlic. Bake/roast in oven for 15 minutes then remove and fill with left over risotto.

If worried about it drying out you can top with some cheese or cover with foil. Another 10 or 15 minutes should be fine.

I would make a nice vegetable & tomato sauce - onions, garlic, tomatoes, chopped up carrot, peppers, courgette, herbs etc - and mix it with rice or cous cous. Cut the tops off the peppers and cut the bottoms until they are flat then fill with rice or cous cous mixture. Top with grated mozarella and bake (not sure for how long - haven't actually made them for years but they are nice!).

cook rice and then add teaspoon of cumin and cinnamon and then loads of chopped cooked veggies like tomatoes, mushrooms, peas, broadbeans (anything really) then cook in oven until pepper is soft - serve with a blob of creme fraiche or soft goats cheese - you can also do this with roasted butternut squash which is yummy.

We have them stuffed with tomatoes, pesto, feta and bredcrumbs. V yummy and v easy and not too filling.
