I've got some chicken breasts that need to be cooked today and I can't be bothered, can I just bung them in the oven?

Like you would a roast, obviously for a much shorter time. Would they be very dry? I just can't face being in the kitchen any longer than it takes to pour a glass of wine.

Do you want to eat them this evening or just cook them for refreezing ?

TheArmadillo · 09/01/2007 20:31

Put in oven tray with a little water in the bottom and foil over the top.
My oven (fan) takes about 20 mins for 2.

my ds has a v.restricted diet of chicken/potatoes and i cook his chicken in the frying pan with olive oil. its lovely and juicy.or i put it in the oven for 20mins with the oil

Pinkchampagne · 09/01/2007 20:34

Can't you freeze them?

Glassofwine · 09/01/2007 20:34

Thought I'd just cook them and use in sandwhiches/ salad tomorrow.

JustUsTwo - I can't possibly shallow fry them as I'd have to stand in the kitchen, it has a cold tiled floor and I hate being in there once the children are in bed. DH away and I am just too tired, so I really want to take no more then a minute.

Bring a pot of water to the boil.

Cut the chicken into strips, throw into the water. Remove pot from heat, retire with a glass of wine. You can then freeze and use in curry or whatever.

Re the tiled floor, to quote my Mum, buy some slippers.

I have had some chicken breasts in the fridge, which are nearing their sale by date & have bunged them in the freezer tonight, to use at a later date.

wrap them in some foil with a bit of butter and some lemon juice, it will be yummy in sandwiches
