How can I cook courgette so its not soggy

am steaming carrots - but my last attempt to add courgette ended up with soggy courgette!

I always fry it in a mixture of butter and olive oil. Not that healthy, but much more tasty!

Slice it thinly, put it on a baking tray with some olive oil and stick it in a very hot oven. Lovely and crispy.

courgette in olive oil is very nice first weaning food, dd loves it.

courgette is very watery and spongy so they do go soggy by nature, I'm afraid.

The only way I can eat courgette is roasted and mixed with other veg. A fave 'recipe' I use is

Charlotte potatoes (or any small, waxy spud)
Courgettes x 2 lge (deseeded)
Whole baby carrots (or normal carrots chopped)
Red Pepper (deseeded)
Yellow Pepper (deseeded)
Red Onion
Lemon

Pre-heat oven to 180 degrees. Chop all veg into big chunks (halve the spuds) and put into a roasting tray. Deseed the courgette and just put the firmer flesh in the recipe (inc peel). Chop the lemon in half and squeeze 1/2 lemon over the veg and chop remaining lemon into chunks and add to tray of veg. Season heavily with salt and pepper and drizzle with plenty of olive oil (not extra virgin, it burns too easily). Give it a good mix around and re-season. Roast uncovered for about an hour, depending on how big you cut the veg.

you can griddle them if you have a griddle pan, or one of those george foreman jobbys.
