Coconut milk ice cream?

I have a lovely ice-cream maker, given to me as a Christmas present, which I have only used once as yet for mango sorbet, which was simple & delicious.

The other day at Tesco, I got a carton of Coconut Dream milk for a hugely reduced price of 14p, from the refrigerated section & wondered if I might be able to make ice-cream out of it? I've not been able to find any recipes but thought I would ask you wise MNers

Alternatively, if it can't be used for that, what should I use it for? It has a BBE date of February next year.

I use it to make curry sauces. It simmers down to a lovely sauce, add a bit of spice/curry paste and meat/veg as required.

i'd say you'd need to make a custard out of it....either thicken with eggs or cornflour, eggs is usual or icecream and then churn away

it wouldn't be nice if you just did the milk...it'd be icy and crunchy

maybe fling some banana in....even if you do not normally like them it does something nice to the finished texture, makes it more fudgy and icecreamish. I ve done that with just double cream and honey before for the children

Ton that sounds doable - I actually have eggs from our chickens & some overripe bananas that need using up, so I could use those. Would I just fling them all in the maker together?

Bike that sounds like a great idea if I can't make ice cream work or even if I see it reduced again (I'm a sucker for a yellow label )

have a google, but make your custard first and let it cool

eggs with sugar, whisk together, add a little milk to that then heat the rest gently, then hot milk into egg/sugar/milk and bring the lot to a gentle boil to thicken...keep stirring all the time, you are aiming not to scramble the eggs.

then once it's cool hurl it all into the icecream maker with the banana and honey

This recipe doesn't involve your ice cream maker, but it is lovely if you have a blender.
Slice 2 bananas and freeze them, spread out on a tray so the slices don't all clump together.
Put the slices and your coconut milk in a blender with the grated zest of a lime and juice of half the lime.
Blend until it turns to ice cream.

I would think it should make a lovely vegan ice cream if you thicken it with corn flour and add some ripe bananas. Yumm!
