My italian friend baulked at the idea!! I normally add lentils to normal lasagne made with mince so it doesn't sound unreasonable to me, but have veggie friends tomorrow so have made a veggie one.
What do you think?

I normally make veggie lasanga with peppers, courgettes and tinned green lentils.

I always make veggie lasagne with lentils. Red for a mushy effect (nicer than it sounds), or green for more texture. I also add whatever vegetables I have to had, and some herbs (basil etc.) and it is delicious!
