What can I do with the remainder of yesterdays roast chicken? Soup? How?

Title says it all really. My children have only ever eaten Heinz tomato soup, so am keen to get them trying something new, but no idea where to start. There is a reasonable amount of meat left onthe bird. No idea what to do though

A pasta bake with chicken bits mushrooms and a red pepper, in a white sauce, with cheese on top. Or a risotto, and you add the chicken bits at the end.

also worth knocking some stock up with the carcass and freezing it for later use (if poss). Home made chicken stock rocks for soups. Stock day yesterday... ...8 pints!

The day after roast chicken is a favourite with dh and dd...

Shred/finely chop the chicken.
Jar of Tesco Finest Hoi Sin Sauce
Shredded lettuce, thin strips of cucumber,red pepper and spring onions.

Spread Hoi Sin sauce on a warm tortilla, then add everything else to taste.

Roll up, and enjoy.

Chicken Soup -
Fill a large soup pot with water and put in a whole onion (skin on), some chopped up celery, carrots, butter beans and the chicken carcass.
When it comes to a boil add a couple of stock cubes or a couple of teaspoons of powdered soup mix (my favourite is Telma chicken flavoured soup powder) and some saffron.
Simmer for a couple of hours occassionally skimming any fat and scum off the top.
Remove the onion and the chicken bones.
Shred the remaining chicken meat and add to the soup along with salt, pepper & parsley.

It's also really nice with skinny egg noodles but cook them separately and only put them in the soup when you're ready to serve.

Alternatively, yummy chicken salad:

Chop up the chicken meat and mix with mayo, cranberries, walnuts, celery, salt & pepper. Just serve with a green salad or in pitta pockets.
