Really fancy the sound of it. Is it just a big meatball in a loaf tin? Any good recipes?

my mum used to make gorgeous meatloaf. she used hand minced lean beef, lambs liver and sausagemeat, with herbs and seasoning to your taste, bind with an egg...
Bake in loaf tin... serve with homemade gravy
YUM!

No I haven't but also popped in to say what a good title!

colinsmommy · 26/05/2004 21:35

Sorry, all I have to say is that is the best title of a thread I have ever seen.

phatcat · 26/05/2004 21:58

hee hee - just spluttered red wine all over my keyboard at this thread title

Meatloaf always reminds me of Roseanne - that's all she ever used to cook IIRC

Snigger, Tinker!

A great gravy to have with meatloaf uses diced onion friend in a drop of oil, tomato puree (or sauce), cider or balsamic vinegar and Branston pickle. Simmer it all together for a few minutes. (Just make up your own quantities btw, it doesn't really matter!)

This is an old Scottish Slimmers recipe:

MICROWAVE MEAT LOAF - Serves 4
small onion, chopped
75g carrot, coarsely grated
400g lean minced beef/minced steak
1 dspn Worcester sauce
1 dspn tomato puree
1 dspn dried parsley
2 Bovril cubes
1 egg, beaten

In a 1 litre (microwavable)casserole or 1kg microwavable loaf pan microwave carrots and onions, covered, on high, 4 minutes or until soft. Mix in mince, Worcester sauce, tomato puree and parsley. Crumble in Bovril cubes, add beaten egg and mix thoroughly. Press down mixture and cover. Microwave on medium (500 watts) 12 minutes. Stand 5 minutes then drain off surplus fat.

(Serve with jacket or mash potatoes, veg and gravy.)

I did make proper meatloaf when I lived in America but can't remember how to do it! I know the recipe I did used apple sauce, wish I still had it.
