Dairy free lemon icing

I know this sounds really obvious. Make icing with icing sugar & lemon juice / water. But how do I make this look pretty. I'm used to piping butter cream on to cupcakes. I'm not keen on the splodge and smooth iced technique. Any tips / alternatives?

The special 'fondant icing' sugar is easier to use. Make it up quite thick too, then it sort of self-levels.

Can you make up royal icing (from a packet) but use lemon juice and possibly a bit of zest? That's definitely suitable for piping.

I was also thinking about the dairy-free spread option like MidnightVelvetthe5th

Trex makes much better butter icing than pure.
