Well I make simnel cake using gluten free flour, but you could make meringue nests, filled with whipped cream and with chocolate flakes and eggs. Little chocolate mousse pots could be decorated with an Easter theme too.

I am doing the meringue nest.The Matchmakers used in the nest are GF if you buy Quality Street.

And Cadbury Mini Eggs are also GF.
