hot cross bun dilemma

does anyone have experience of leaving uncooked hot cross bun dough in the fridge, or freezing the dough?
I want to make some to eat for brekkie at easter , freshly cooked, would appreciate any advice- thanks!

I've done this tonight. Make dough and let prove once, then shape into buns and let rise slowly overnight in the fridge. Take out about an hour before you want to bake, put crosses on and then bake. I do this with Chelsea / cinnamon buns all the time.

Yep. Rise them in the fridge overnight.

Oh, and the crosses are much nicer made of icing than pastry.Grin

And don't forget the glaze.

They actually have a much better flavour and texture if you do that.

My mum freezes them ready to bake in the morning. I was going to leave them to rise overnight but left it all too late so I've had to leave the dough proving overnight & will have to get up early to create the buns!
