Stuck in a breakfast / packed lunch bread rut and looking for some tasty healthy alternatives

I generally have to take a packed lunch daily as I travel around a lot for work. Often no access to a microwave and due to lack of planning and ideas lunch usually ends up a sandwich and packet of crisps. Quite often after having toast for breakfast (when I have time)

I need to lose a bit of weight and I also want to enjoy the food I'm eating but I'm stuck for ideas. Ideally I want things I can prepare in advance as I am always rushing in the morning but that won't overstretch our budget.

Is really recommend bicher muesli. Really easy to make night before and it's delicious for breakfast. Google it and you'll find loads of recipes. My fav is porridge oats with apple juice, grated apple, dried apricot and blueberries leave in fridge covered in cling film and then add some seeds and yoghurt just before serving. Delicious, fills you up and good for you.

If youhave time for toast most mornings you would have time for a quick omelette. Couple of eggs, smidge off butter or oil in non stick pan, really filling. Second Bircher muesli too.

Porridge for breakfast nutritious and fillings.

Chicken or tuna salad for lunch prepared the night before so not rushing in the morning.

Not heard of bircher muesli, I'll definitely have a look. I don't have a sweet tooth especially in the morning so tend to avoid cereals and the usual breakfast ideas as I find them all too sweet.

Tuna or chicken salad sounds ideal. I really need to get in the habit of making things up the night before, I just find I can't be bothered after working all day and not getting home till late most evenings

I make mine lunch up at the same time as making tea in the evening, I make 2 days lunches in Tupperware pots so Its less work and I'm glad in the morning when it's done and I have a healthy lunch to take to work.

Tesco sell the bircher muesli mix which makes it a bit easier, I would also add a touch of honey to the recipe on the back of the pack, or before eating though, makes all the difference I find.

Yes to leftovers, soups, curries, pastas, risottos...love a bit of leftover lunch!
