What side dishes to serve with lamb, ideally make ahead?

I have 15 for lunch on Easter Sunday and I'm doing lamb with garlic and rosemary.

I'm thinking of minted peas as one side dish, plus pigs in blankets and possibly a tray of baby potatoes roasted in their skins.

What else? There will be 6 children of various ages.

I'd do some kind of nice carrots (drizzled with balsamic), maybe spinach with garlic, and maybe something a bit different like jewelled couscous?

Roasted veg. Can all be prepped ahead of time and then just popped in the oven.

I do braised green beans and tomatoes, which is absolutely delicious with lamb, can be cooked in advance and reheats beautifully.

This is a very similar recipe but I put onions in mine and sub the mint for oregano.
