Got loads of chicken mince - can anyone inspire me?

I don't want just to do chicken versions of spag bol / lasagne etc and ideally something healthy and not too fattening. All I can come up with is stuffed peppers...

chicken kebabs - mix the mince with onion, spices etc and then squish round a kebab stick ... yum!

def burgers - the Nigella recipe where you mix chicken mince with sausagemeat and nutmeg is pretty good, but plain chicken is ok too (use ketchup to mosten if the mince is too dry)

also meatballs

And Enid has a great chicken nugget recipe somewhere - will search and post if I find it.

all these are good because you can make loads and freeze some so you don't get 4 days of the same thing for dinner.

Keema with peas

Brown mince, add chopped onion, 1/4 tsp tumeric, 1/2tsp ground coriander, garlic, ginger, cumin, black pepper, salt and cayenne pepper - OR - 1/2 tspn curry powder, 1/2pt stock, diced raw potato, mushrooms, handful of frozen peas, simmer til potato tender. Serve with basmati rice

I'd do burgers but because chicken meat is so bland I'd put in loads of spices or fresh herbs.

Enid's Homemade Chicken Nuggets
750g minced chicken
175g breadcrumbs
175g grated cheddar
1 tbsp mayo to bind
1 clove garlic
salt and pepper
beaten egg and some fine toast breadcrumbs to coat the nuggets

Preheat oven to 180C.
Mix all ingredients up to and including salt and pepper together.
Form into walnut sized nuggets and roll them in beaten egg and then in toasted breadcrumbs. You can freeze them now if you want to.
Place on greased baking sheet and cook for about 20 minutes (45 if frozen).
Voila!
