Veggie hob top / microwave meals / slow cooker meals

We're going to Center Parcs in the Netherlands for a long weekend at Easter. The accommodation doesn't have an oven. We will probably eat out a couple of times but I don't want to eat out every evening.

Does anyone have any suggestions of meals we could do on the hob / microwave / slow cooker (which I will take with me)?

They need to be veggie (but happy to use Quorn) and not spicy or 4 year old DD won't eat them.

So far, I've thought of sausage and bean casserole in the slow cooker - I could do with some more ideas please!

Chilli (mild then add more chilli powder after dd fed)

Baked potato and beans/coleslaw (I don't like microwave baked potatoes but most people do)

Soup - broccoli and watercress, carrot and Butterbean, lentil and veg, tomato, potato and leek....

Potatoes (mash/boiled) veg and quorn sausage/burgers microwaved

Spag box with quorn mince, pasta and pesto, pasta and tomato based sauce

Courgette, garlic and Parmesan ( or veggie appropriate cheese) pasta

Broccoli, lemon and Parmesan pasta

Vegetarian carbonara

Cherry tomato and black olive sauce with pasta ( see a theme? )

Slow cooker Minestrone / ribollata / country veg soup/ carrot and coriander soup/ French onion soup: red lentil dhal or soup
