What's your favourite lunch / salad to take to work?

I'm starting work again in the Spring and will need to bring lunch in. I don't want to resort to sandwiches every day and will need something filling to get me through the day since the canteen food is gross there is no option to buy anything near by. What lunches are your favourites?

Ooh those mason jar salads look fab! If making a tuna salad where would you put the tuna given its normally a bit wet?

Nicoise salad - lettuce, tuna, boiled eggs, olives, cucumber, salad potatoes. Little pot (left over from weaning days!) of dressing. Not sure how genuine the recipe is, but it works for me.

Cous cous salad - cous cous, lemon juice, parsley, roast pepper/mushrooms/courgette/aubergine, chickpeas.

The frozen jacket potatoes you can get aren't bad at all. Not as nice as a proper jacket spud, but much nicer than a microwaved raw potato.

Homemade soup, piece of cheese, oatcakes

Hummus and stuff to dip in it - nice crackers, posh crisps, carrot, cucumber, cherry toms, peppers

Spanish omelette

Faith - when I do tuna salad in a mason jar I would mix the tuna with onion , peppers sweet corn and mayo/salad cream and put the in the bottom then layer up more peppers, cherry toms, radish, celery and then whatever leaves you want on top

I often do kind of deconstructed salads and keep the bits in office fridge. Always have a jar of
Something like hummus or salsa verde to make things more interesting. Add the moment have 101 cookbooks mojo ajo which is delicious and been tossing roast sweet potato in it.

Usually have a big thing of
Marinated kale on the side of everything plus cherry tomatoes and shredded red cabbage.

Often a sweet potato for the carb because it's so easy.

Then usually a pulse, smashed chickpeas and tahini, frijoles, cannellini beans with preserved Lin, herbs and pomegranate molasses, daal, put lentils with herbs and feta. Or leftover roast chicken.

So basically a few veg in fridge at work, a batch of protein made at beg of week and a condiment made at beg of week.

Also make noodle soups which are really easy with thin noodles. Handful of veg, handful of dried noodles, sachet of miso soup and boiling water.

I tend to make salads for work , Monday- Tuesday are left over roast chicken. Wednesday prawns and Thursday Friday tuna. I put whatever salad I like usually red and yellow peppers, tomatoes, sweet corn, cucumber with a dressing like mayo or a spicy hommous. All healthy and fresh and cheap.
