what to cook with red rice??

Just that really (probably a very silly question) - bought a packet of red rice as it looked interesting and now I'm wondering what to cook it for/with?

Is there anything that it is specifically used for or goes well with?

it's nice in place of brown or white rice - we had it last night with veggie chilli

It's really nice with plain pan fried salmon and whatever veg you fancy.

But the PP's idea of having it with some sort of BBQ flavoured pork with sauce sounds very nice too.

I do meatballs and tomato sauce with it. Also have it as a salady lunch. Today having it with avocado, kale, roast squash and a miso tahini dressing
