freezing chicken pie

If I made and cooked the filling for a chicken pie, then cooled it - could I freeze until I want to use it, then defrost and cover with pastry?

Or would it be dodgy?

Also, does anybody have any chicken pie recipes? Grin

Yes that should be ok, although you could freeze with pastry as well. I'd get out the day before and defrost in the fridge and cook until piping hot.

My quick chicken pie recipe is

1 chopped onion
1 punnet of mushroom chopped
3/4 chopped chicken breasts
1 tin condensed mushroom soup
1 pint chicken stock
a few handfuls of what veg I have in the freezer

fry the chopped onions when soften add chicken lightly fry. Cover with soup and chicken stock add veg. Bring to the boil, simmer 30 mins.
