Best 'not much in the fridge' meals

I have just made something surprisingly delicious from an almost empty fridge - bacon and courgette cake.
Basically, gently fried half a courgette, a couple of strips of bacon, half an onion and added to a mix of eggs, oil, self raising flour and grated cheese. Sprinkle of herbs, baked for 45 mins. Lovely with a bit of sliced tomato (and would have been even nicer with a full salad!)
Please tell me your best 'nothing much in the fridge meals'.

Half pack bacon, fry with a red onion, five mins. Don't add more fat.
Add a chopped red pepper. Five more mins.
Add half a cooked chicken breast, shredded. Stir. Add quarter of a chopped cauliflower. Fry five mins.

Add a tin chopped Tom's, refill with water. Add to pan. Big handful red lentils. Stir. Bayleaf, garlic, Italian herbs.

Cook twenty mins. Add big handful spinach at the end.

Served with leftover sweet potato mash.

Pasta with basic tomato sauce
egg, chips and beans
jacket spuds and cheese/tuna/beans
veggie curry
wedges with tuna, cheese and peas
