Meals that will last 2-3 days?

Hello, everyone. My partner and I work together as freelancers. We are currently working in such a way that he spends Monday to Thursday in a flat in another city working for one of our clients and I spend Wednesday to Friday evening also in that flat. We spend weekends at home.

He's not a bad cook, but he is rather stressed as his work is very demanding. I have a lighter workload and am a better cook than him Grin. So I thought it might be nice if I could leave something in the fridge which he could have on Monday or Tuesday when he gets back to the flat. The rub is, of course, that the meals would go for at least two days without being eaten.

Any ideas? Thanks in advance!

So things like stews, chillis and tagines often taste better a day or so after they have been cooked and keep well - and i'm sure they would go down well in this colder weather. Then he just needs to cook some rice/potatoes/cous cous and some veg if he fancies

I can't really think of anything that can't keep for two or three days other than a steak of chop which would always be much better cooked from fresh (which anyone can do). Horror of horrors.......reheat rice!

I often make a 2 day meal for DP and I if I know the following evening I'm going to be working late. It wonderful to get in the 2nd night and know I have to do minimal cooking! The thing I have found works best is a big quiche, you can vary fillings so it doesn't get too repetitive. Can be eaten hot or cold, easy to portion control and you can put together quick salad to go with it to bulk it out.

A bit late but anything made fresh will last 3 days chilled in the fridge. Portions of curry chilli casserole can be taken to the flat frozen & defrost in the fridge. Ready rice pouches & a bag of steam veg on the side. Think along your average ready meal ailse.

Could you get a small counter-top freezer to put some food in for him so less stress about the food being okay in the fridge for a few days?
