Best batch cook recipes for veggies - to survive newborn's first weeks

One of my maternity leave plans is to batch cook beforehand as made the mistake of not doing this for last ds. Any tried and tested veggie recipes that are easy and tasty?

Ratatouille freezes well - then you can just Bing a jacket potato in the oven to eat with it.

I usually do ratatouille by just frying onion, courgette, red and yellow peppers with some paprika and seasoning. Then add chopped tomatoes and simmer for a while.

I'm not a batch cooker, so not much help but ime:
Lentil dhal freezes well. If you search my name, my recipe should be on here. Then you'd just need some rice (microwave if feeling lazy!) and maybe some fresh salad for a v quick meal.

Soup? Then if you kept some bake at home baguettes in the cupboard you could have a v easy meal without needing to do any shopping.

I'm veggie, husband isn't. I made plain white sauce so that there were options regarding what to make with it when time came eg added cheese for macaroni cheese, used as parsley sauce etc. Made loads of quorn bolognese, chilli etc. My thoughtful mil bought round fuckloads of MEAT lasagnes which I don't eat but her darling son could. You know, cos I'd be neglecting him when the baby came
