Can we have a thread with cooking/baking related questions and tips please?

Just that really. I have a couple of cooking questions that am hoping someone can answer. In return I have a couple of tips that may be of use to someone.

I'm desperate to find a great tarkha dhal recipe as all the ones Ive tried are lacking in flavour. Can anyone please help?

Also, what is the purpose of vanilla in baking? Its often an added ingredient however I rarely taste it.

My tips are that most of Nigella's cake recipes are overly sweet so I usually cut the sugar by at least one third and result is fine.

And don't crowd the frying pan with mushrooms as they wont brown.

You need to use neilsen Massey vanilla extra to taste anything. I've never used another brand since discovering this one.

There is a lovely cauliflower Dahl recipe on Riverford's website. Omit the cauliflower if you want plain Dahl.

I chop big bunches of coriander and put it in a tub in the freezer before it turns into slime in the fridge.
