Pizza Express Pollo Pasta recipe

I crave this on a weekly basis, but given that I can't keep dragging DH there, I want to try and get it right at home. Has anyone had it and tried the same? I'm sure there is some level of creamy pesto, Romano cheese, balsamic red onions (which is fine because we have all that) but there is just something binding it together I can't put my finger on...

i found someone who's obsessed with the pollo pesto too. I have a taste card and eat at pizza express 3 times a week and get 2 main courses. I have the pollo pesto extra extra creamy, its amazing. I can't believe I haven't got sick of it yet considering the amount of times i have it. The sauce they use is béchamel to combine. I have never tries making it at home. but i think its got 2 or 3 cheeses, parmesan and mozzarella and there maybe 1 more, I've never asked them either.

I had it the other week and there was masses of virtually raw red onion in it, I had to pick them all out as they were so strong, is it usually like that?

Iceland sells it frozen. Their pizza express range is superb.

The sauce that is used is a gruyere cheese sauce and the pesto is added afterwards. The onions usually come from Spain if that helps. Small cubes of mozzarella are added before baking. The only parmesan is what is in the pesto and it tends to have closed cup mushrooms and Portobello

Hi, Pollo pesto:

Made in a balti dish.
Premade betchamel from a carton
Squirt of green pesto (ratio 4:1)
Mix with spoon
Sliced red onions
Sliced white mushrooms
Half a chicken breast torn
Mix
Top with half a handful of low moisture mozzarella cubes.
Into a pizza oven for 6-8 minutes at 350 c
Remove, mix again, into a bowel
Top with grated gran pardano cheese, garnish with a basil leaf.

Enjoy

Lol don't forget penne pasta, already cooked Al dente and mixed in before the oven
