To who ever recommended the recipe for roasted chicken with lemons in from Marcella Hazan Knopf, I just want to say thankyou so much. It was so easy and was the best roast chicken I have ever tasted, very juicey and lovely lemon taste right through it. No faffing about with basting or foil and stuff.

I saw this post yesterday, and although I didn't reply, i roasted a chicken tonight with 2 chopped up lemons in, and it was divine.

I do my roast chicken with lemons & oranges -- don't know about Marcella Knopf's technique. But I cut lemon & orange in half. Juice one half, then cut the other one in wedges. Stuff wedges, plus some garlic cloves & thyme in cavity. Roast, basting with leftover juices.

I fell down at the point where you had to rub stuff into the chicken's inside bits. Urk. Wonder if I could get dh to do that. (When I cook a chicken, which is VERY rarely, I get a pre-stuffed jobby so as not to have to mess with 'the insides').

i do lemons and garlic, and an apple cut up, in the cavity,,then make a slit between the skin and the breast meat, make a gap and stuff with butter and lemon peel
then sprinkle with rock salt, paprika and olive oil

That is the recipie I used on the link.

I didn't really do much rubbing inside . I didn't have string so sort of held it together with cocktail sticks. Used them to hold the legs together too.

So simple no basting just turn it over after 20 mins that is it. So if you can get away with not stabing yourself while pricking the lemons or stiching it together with cocktail sticks you can sit on your bum for the whole time it is cooking. I preped my veg and put them on once chicken was cooked and cvered it with foil and a couple of towels (still warm after 45mins) while I did the veg and stuff, presented it to FIL to carve while I served up veg.

I chopped a lemon into wedges.Then I shoved them up the chicken's bum.
