Chewy chocolate chip cookie recipe

I have tried several recipes but still haven't found a good one. I am after a cookie that is chewy in the centre but still firm. River cottage ones spread too much and end up to thin and another tastes too fizzy despite reducing bicarb. Any suggestions?

This never lets me down - but exactly 12 minutes even though they don't look cooked. They will firm up a bit when cooking. Gorgeous!
