Foolproof gingerbread recipe

Hello, I'd like to make Wookie cookies, for my sons Star Wars themed party. I can bake, reasonably, but have never made gingerbread men without them either being too crumbly or tooth breakingly solid. Anyone got a fool proof recipe?
