I am trying to get out of a rut. Can you give me 7 easy breakfast ideas or lunch ideas or dinner ideas (or 7 after school snack ideas!) I want to steal your ideas!! Smile

Breakfasts:

Berry overnight oats - soak porridge oats in some fruit juice, or milk, and natural yoghurt. Add frozen berries. In the morning top with some flaked almonds. Alternative - use grated apple instead of berries.

Banana pancake. Mash a banana with one egg white, whisked till fluffy. Microwave in a shallow bowl until firm. Top with blueberries and maple syrup.

Spinach scramble - pile spinach into a bowl, and microwave for 30 seconds. Crack a whole egg (or 2, or one whole and one white) into the bowl and stir thoroughly. Microwave for a minute, check if cooked. Add a cheese triangle, dotted across the surface, and micro for 20 secs.

Soft boiled egg with steamed asparagus spears for dipping, or marmite soldiers.

Half a bagel, toasted, topped with cream cheese and smoked salmon.

Burgen bread (I keep a loaf in the freezer) toasted and topped with marmite and cottage cheese.

Eggs benedict - toasted muffin, slice of ham, poached egg, cheese or hollandaise sauce.

Dinner :

Chill and rice

Chill wraps (chilli in a tortilla, wrapped up, top with cheddar, grill)

Roast veg and chicken thighs (make two batches)

Leftover roast veg and chicken chopped small, mixed with red pesto and penne

Salmon, honey, soy sauce, in oven, 20mins. Sliced courgette, red onion, oven 15 mins. Add spinach last two mins. Serve with rice or cous cous.

Will come back with rest!

Avocado and roast tomatoes on toast
Egg in a nest (bread with hole and egg cracker in)
Sweet potato apple and raisin muffins
Pancakes with grated Apple mixed in
Breakfast crumble

Lunch

any combination of
Garlicky black beans/ratatouille/hm baked beans/roast chicken thighs/deconstructed hummus/other protein

  • kale or spinach + a handful of cherry tomatoes + thinly sliced red cabbage or grated carrot + quinoa/red rice/baked sweet potato

Miso aubergine with rice, kale and spicy carrot salad and sriacha

Avocado and cucumber with lime and sesame seeds/goats cheese and roasted tomatoes on rye bread

Glass noodles with a sachet of miso, kale/spinach, carrot, shredded chicken, general veg, coriander and lime and boiling water to make a sort of pho.

Kale chicken Caesar salad with croutons

Lentil and bacon soup/any soup

Leftovers!

Naice sausages baked with loads of cherry tomatoes, herbs and balsamic vinegar with mash and lots of garlicky greens

Hm chicken tikka masala with flat breads, spicy carrot salad, aloo gobi with spinach

Mushroom risotto

Slow cooked pork shoulder ragu with crusty bread and salad

Cabbage, bacon and chestnut lasagne

Herby cod cakes in tomato sauce with brown rice and vegetables

Slow cooked lamb shoulder with hummus, flat breads and a million salads.

This is my rut!

Breakfast:-
Cereal x5 and fruit salad.
Blueberry pancakes.
Something eggy (e.g. boiled eggs and solders or scrambled eggs, roasted tomato, mushroom and toast).

Lunch
Soup x3 (with a sandwich for hungrier members of the family).
Falafels or hummus, pitta,grated carrot, veg etc.
Something eggy (pea and fetta omlette or breakfast burrito, egg sandwich or egg salad).
Pasta - with tomato sauce or broccoli pasta or smoked salmon pasta.
Toasties

Dinner
Casserole (chicken usually).
Something with roasted veg (e.g. pasta/gnochi/chicken scooter).
Something mexican - tacos or burrito or fahitja (mostly veg).
Kids favourites- lasange and garlic bread or bolog or sausage pasta (with salad for those wishing to be more healthy!).
Quick bung in oven tea for LOs - e.g. fish fingers and veg and maybe a curry made from scratch for grown ups or ready meal or take away).
Something with oily fish e.g. salmon and presto or salmon and steamed veg.
Something comforting - e.g. roast chicken or homemade burger/kofta.
