Breakfasts:
Berry overnight oats - soak porridge oats in some fruit juice, or milk, and natural yoghurt. Add frozen berries. In the morning top with some flaked almonds. Alternative - use grated apple instead of berries.
Banana pancake. Mash a banana with one egg white, whisked till fluffy. Microwave in a shallow bowl until firm. Top with blueberries and maple syrup.
Spinach scramble - pile spinach into a bowl, and microwave for 30 seconds. Crack a whole egg (or 2, or one whole and one white) into the bowl and stir thoroughly. Microwave for a minute, check if cooked. Add a cheese triangle, dotted across the surface, and micro for 20 secs.
Soft boiled egg with steamed asparagus spears for dipping, or marmite soldiers.
Half a bagel, toasted, topped with cream cheese and smoked salmon.
Burgen bread (I keep a loaf in the freezer) toasted and topped with marmite and cottage cheese.
Eggs benedict - toasted muffin, slice of ham, poached egg, cheese or hollandaise sauce.
