What's you favourite way of making your roast chicken different?

I've recently started mushing butter and garam masala together and smearing that on the chicken before it goes in. It's absolutely gorgeous, just subtly fragrant without being curry-flavoured. And it makes for gorgeous gravy with a bit of redcurrant jelly melted in.
Anyone else want to share their secrets?

butter with crushed garlic and slices of lemon on top is nice too.

We've done it Jamie Oliver stylee - well, it was my brother that told me.

You par boil the potatoes with cloves of garlic (not chopped, peeled or anything) and a whole lemon. Then when that's done - you shove the garlic and the lemon (pricked first - watch out, the juice is boiling, obviously!) inside the chicken along with loads of fresh thyme and cook it that way. It's absolutely gorgeous.

chop up orange into 8 segments and shove in bird with garlic, ginger and thyme and corriander.

Cook.

Then take out stuffing bits, put in some stock in a pan, reduce and strain.

Best gravy ever ever ever.

The Greek way:

Olive oil, crushed garlic, lemon and loads of oregano. Salt and pepper. A little water in the roasting pan with the oil.

Cook potatoes in the same pan. When you serve, pour the pan juices into a jug as a sauce. It's gorgeous.

Works with lamb too.
