Help me with a super-efficient prep-ahead meal plan system please

I'm determined to become more efficient with cooking; the thinking about it and shopping and planning takes up way too much of my time (bc I'm disorganised, not doing anything particularly complicated).

I work freelance so can use my time as I like, and am thinking of staying home all day Monday and using it to blast through household stuff - washing, shopping, cooking, prep (veg, salad etc.). Ideally I would have a system where I would cook a couple of things that we could then reheat in the week and/or put in the freezer for the following week.

I'd really like it if putting in 90% of the work on a Monday meant that Tues-Friday would just be a case of warming up or assembling (salads etc).

Anyone do anything like this? And if so, any tips or particular meal suggestions?

Not totally sure yet :) It's my first time trying this method.

I will have some with pasta and Parmesan shavings; and probably some with greens/broccoli and feta. Perhaps with brown basmati rice?

I don't have to cook for the DC, but I work FT and by the time we are home and I've put the kids to bed I kind of run out of steam for cooking a good meal for myself. I'm happy to eat veggie meals most nights and I don't mind eating the same thing a few nights in a row. I am trying to increase my veggie intake and base every meal on vegetables.

They would be nice on a pizza too. Have you frozen pizza dough Fab - it's easy to make a big batch of that and freeze in portions and it defrosts quite quickly. I make the Jamie Oliver recipe and use 20% semolina, 40% wholegrain flour & 40% strong flour which boots it nutritionally a little - delicious.

I roasted a big tray of veg yesterday too lovelyfriend! Last night we mixed some with tomato sauce, beans and herbs, spooned it into tortillas to make enchiladas and baked in the oven.

Spreading them with sour cream and grated cheese makes them go all creamy too.
