I need your perfect birthday cake recipe please (plain not choc)

After a year of cooking from scratch I feel ready to embark on a birthday cake.

If possible a recipe that uses plain flour as i'm out of sr

To make a sponge - which is what I would use for a birthday cake:

weigh your eggs - 3 or 4 depending on size of tin you are using (3 egg mix for 2 x 7" round, 4 egg mix for 2 x 8" round)

use weight of eggs in flour, marg and sugar

cream marg and sugar, stir in beaten eggs, 1tsp vanilla essence

fold in flour - using 1 level tsp baking powder for every 2 oz plain flour

grease and flour tins, put half mix in each tin. Bake 170 25/30 mins.

buttercream icing

3 oz marg, 6 oz icicng sugar, drop or 2 milk. cream together. can add orange juice, cocoa, vanilla essence etc to flavour

Delia Smith's all in one sponge is foolproof... just as long as you use sr flour! It's bound to be on her website if you haven't got the book.
