I've been collecting leftover veg in the fridge since Boxing day. Any ideas, what to do with it?

All cooked. Seems fine, though maybe a little smelly...

If it was uncooked I would keep it but as it is cooked I would throw it away

If they are still okay, fry some shallots in a big shallow pan, chuck in the veg, get really hot and crisp then and add a couple of beaten eggs , a sort of frittata :)

Bin, they are 8 days old and already cooked. You needed to have used them within a day or two
