Turkey - quite simple question to which I don't really have a clue?

I am cooking a turkey today as we are having cold cuts on Boxing day and I really don't want to be cooking AT ALL then. (Having beef on Xmas day)

All good so far. I will cook then take the breast off and slice then freeze.

What to do with the rest. I would like to make some sort of soup/stew but am a bit flummoxed as it will already be cooked meat.

Any suggestions?? Thank you in advance. Whatever is made will get eaten this week rather than afterwards. I do not eat curry BTW.

dice the cooked meat
make a duxelle with finely chopped mushrooms sweated in butter, a couple of finely chopped shallots or a small onions, some fresh herbs, pepper and a good splash of sherry

Use a can of condensed chicken or mushroom soup to bind it all together. Use as a pie filling for filo pastry pies, individual portions, brush with butter and sprinkle with sesame seeds. Bake in a hot oven for 15 mintues, cool, freeze and defrost thoroughly then back in the oven for a further 15 til heated right through.

Thanks for answering so quickly, so if I make a stew I sort of do the veg etc first then add the meat a bit later......sounds easy.

Sunny, that sounds like a great idea actually, never even contemplated that....

I usually do a pie on Boxing day with my cold turkey - I put the leftover gravy with it & some herbs - might add bacon/mushrooms or other veg - I usually put potato on top, like a shepherds pie, as I can't be bothered with pastry on Boxing day

Ok, turkey is cooked, have just put on cutting tray to rest.

What do I do with the lovely juices left in the pan??? Would it be better to freeze the sliced breast in em to keep moist or what?
