Gravy

We are eating roast duck today. I want to make my own gravy instead of using the granules.

So far I have made a stock with the giblets. I added onion, carrot, water, red wine and a few dollops of morello cherry jam.

We like our gravy to be thick. We also like lots of it food floating in a soup Xmas Grin

Any advise on how I could achieve this without surrcoming to the devil which is granules

I do it the other way round. Melt butter, stir in flour, cook for a few minutes. Pour stock in, a little bit at a time, stirring lots as you go. Then let simmer for 10 minutes or so. It's the best gravy ever if I say so myself

As above, do it in the pan for the best gravy. I am veggie but I still use this method for the best gravy going.
