We are eating roast duck today. I want to make my own gravy instead of using the granules.
So far I have made a stock with the giblets. I added onion, carrot, water, red wine and a few dollops of morello cherry jam.
We like our gravy to be thick. We also like lots of it food floating in a soup 
Any advise on how I could achieve this without surrcoming to the devil which is granules
