I usually fry them in a little soy sauce.

Fry them in a bit of oil, mix 3 desert spns dijon mustard & honey together then pur over 2 minutes before serving.

seal them in a hot pan with clarified butter and olive oil

season with salt and pepper and bake in a metal baking tinin a hot oven for 20 minutes

take the chops out and keep warm, put the pan on the hob and pour in a small tin of evaporated milk and a teaspoon of mustard and stir and scrape all the nubbly bits up. Pour this fine southern style cream gravy over them and serve with mash and steamed curly kale.
