Parmesan and pine nut stuffing - Please help me find this recipe

I'm trying to locate a recipe that I tasted a few years ago. It was a parmesan and pine nut stuffing made with a base of breadcrumbs (ciabatta, I think). Possibly a Carluccio's recipe. My sister, who made it, has got no recollection of it at all and I'm beginning to wonder if I've imagined it. Can anyone help?

If not any suggestions of a delicious, non chestnutty vegetarian stuffing?

But this has wild mushrooms too.

Thank you. That looks nice. The original one didn't have mushrooms but I think that would be tasty.

Our family have this every year, it is called Italian Festive Stuffing and is from a 2001 magazine - Good Housekeeping I think. Enjoy.
140g breadcrumbs (soft, fresh) 3 tbsp raisins, 2 garlic cloves finely chopped, 3 tbsp pine nuts, 100g parmesan, 3 tbsp parsley, 3 eggs, 50g melted butter.
Combine ingredients and put in 450g/1lb loaf tin (lined with baking parchment). 190C, gas mark 5 25-30 minutes.
(Recipe recommends ciabatta, but I use any breadcrumbs I have.)

Hi. It’s in a recipe book. I have taken a photo of it but don’t know how to post it for you??

Under the comment box there should be a paper clip symbol - this allows you to upload photos
