Why is my mince pie pastry sticking

Hi. Attempting to make mince pies with my toddler. I am not a baker! Followed a paul Hollywood recipe on bbc food exactly but when I roll out my dough it keeps sticking to the table and rolling pin and breaking. When I cut out shapes it stretches and falls apart. What have I done wrong and how can I fix this?

Used lots of flour on the table and just scooped it all up and put back in the fridge to chill. Bin or can it be saved?

Was your pastry chilled when you rolled it out? Also, did you flour your rolling pin?

As above. Did you put the pastry in the fridge to chill for a good half hour before rolling out?

It is a totally different texture once chilled and rested.

Is this a fancy pastry or just a regular half fat to four mix?

Could be a little too wet, or overworked so the butter has softened too much.
Yes, try chilling it for an hour and just roll out what you can manage at once.

I've used the PH recipe, even as a regular pastry maker I found it tricky.
My trick is to chill it for 30 minutes (no more) then roll out between 2 sheets of clingfilm.
It's worth it though, gorgeous pastry.

Thanks. I chilled it originally for 15 mins which was 5 mins longer than the recipe said. After it went a bit wrong I put it back in the fridge for an.hour and that helped a lot
