puff pastry question

Hi all I'm making savoury pinwheels with ready made puff pastry for a work do tomorrow
I've made and rolled them up, they are in the fridge. I plan to cook th first thing tomorrow but just thought they might get really soggy overnight ( filling is pesto, quite oily)
Would I be best to cook them now (night before) and risk them not being as fresh?

How about cook now, but only til v pale gold , then crisp them up with a quick 5 minute blast in the morning?
